Santa Ema 2007 Catalina

Color: Deep dark ruby

Nose: Intense violets, black cherries, leather, and cinammon

Taste: Dry with well integrated soft tannins. Ripe black fruit dominates with notes of dark chocolate and spice. Nice and round in mouth with delicate and persistent finish.

Summary: Named after the owner’s wife, this Chilean red blend is big, bold, supple and elegant. She must be pretty hot if she’s anything like the wine.

Winemaker’s notes recommend at least an hour to decant (and I usually do) but this wine was ready to drink, giving out all its deliciousness at first sip.

This red blend consists of 57% Cabernet Sauvignon, 18% Carmenere, and 7% Cabernet Franc.

Product of the Peumo region in Chile’s Cachapoal Valley, 100% organically estate grown grapes.

Color: Pale yellow

Nose: Green apple, pear and citrus fruit

Taste: Dry and light.  Citrus fruit flavor with crisp acidity. Clean finish.

Summary: Bring out the crab salad or sushi. This is the ideal chilled accompaniment.

Product of Chile’s Casablanca Valley.
